The coffee is processed using the "Honey" method—

a traditional Costa Rican technique that is highly labor-intensive and demands great attention to detail.

The essence of this process is that, after harvesting, the fruit is depulped but not washed;

instead, the beans are placed on drying beds with the moist, sugar- and mineral-rich film still adhering to them.

The moist beans are then dried while being thoroughly turned several times a day.
